Walk into any kirana store or supermarket in an Indian city today, and the shelves tell a striking story. Packets of instant noodles, biscuits, frozen parathas, chips, sugar-sweetened beverages, and ready-to-eat curries occupy more space than ever before. This shift is not just a change in what we buy, it is a change in how we live, work, and eat. The rise of processed food in India is one of the most significant dietary transitions of our generation, with deep implications for nutrition, public health, and the economy.

What counts as a processed food?
Not all processed foods are the same. Nutrition scientists commonly use the NOVA classification system to sort foods into four groups: unprocessed or minimally processed foods (like dal, rice, fresh vegetables), processed culinary ingredients (oil, sugar, salt), processed foods (such as paneer, pickles, freshly baked bread), and ultra-processed foods or UPFs. The last group is the most concerning. UPFs are industrial formulations made largely from refined substances and additives like artificial flavours, emulsifiers, and preservatives, with little or no whole food content.
Common examples include packaged biscuits, namkeen, instant noodles, soft drinks, breakfast cereals, energy bars, and frozen ready meals. These products are engineered to be hyper-palatable, convenient, and have a long shelf life, making them difficult to resist and easy to over-consume.
Urbanisation and the changing Indian plate
The single biggest driver of processed food consumption is urbanisation. Roughly 35 per cent of India’s population currently lives in urban areas, a figure projected to climb to 50 per cent by 2047. Cities reshape daily routines in ways that pull people away from traditional home cooking.
Time, work, and the nuclear family
In urban households, both partners often work long hours, commutes are gruelling, and the joint family kitchen that once produced three fresh meals a day has shrunk to a small nuclear-family kitchen with limited time. A qualitative study on the urban Indian middle class identified long workdays, sedentary office routines, rising incomes, and a decline in household cooking as the key socio-cultural forces pushing people toward packaged and ready-to-eat foods. The market has responded enthusiastically: demand for ready-to-eat and packaged foods in India is projected to reach roughly Rs. 12 lakh crore by 2025.
Rising incomes and aspiration
Disposable incomes have grown alongside urbanisation. Processed foods, especially branded snacks and beverages, carry an aspirational appeal tied to modernity, global lifestyles, and convenience. Investment data from the Government of India notes that changing consumption patterns, a younger workforce, and a shift in the gender composition of the working population have all expanded the consumer base for processed foods.
The reach of online delivery and modern retail
Food ordering apps, quick-commerce platforms delivering groceries in minutes, and the spread of organised retail into Tier 2 and Tier 3 cities have widened access to processed foods well beyond metros. Studies of urban dietary shifts note that online food ordering has become more popular than eating out, and the metro online food market is now worth more than USD 5 billion, normalising frequent consumption of restaurant-style and packaged meals.
How fast is the market actually growing?
The numbers are striking. Sales of ultra-processed foods in India grew from USD 0.9 billion in 2006 to USD 37.9 billion in 2019, an extraordinary jump. A panel study using Kantar Worldpanel data found that three-quarters of urban Indian households purchased over ten processed food groups, with mean per-person annual processed food purchases of around 150 kg in 2016. Even within just three years (2013 to 2016), ultra-processed food purchases in urban households grew by 6 per cent.
The food processing industry is now one of India’s largest, representing about 32 per cent of the total food market, with overall food consumption projected to reach USD 1.2 trillion by FY26. This growth has economic upsides: jobs, farmer income, exports, and reduced post-harvest losses. But the public health side of the ledger is far less rosy.
Health implications: the rise of non-communicable diseases
India is now in the middle of a serious epidemiological transition. Non-communicable diseases (NCDs), including cardiovascular diseases, diabetes, cancers, and chronic respiratory illnesses, account for nearly three-quarters of global mortality, and dietary risks, especially heavy UPF consumption, are emerging as central drivers.
The double burden of malnutrition
India faces a peculiar double burden: undernutrition in some sections of the population coexisting with rising overweight and obesity in others. Data from the National Family Health Survey (NFHS) shows that overweight and obesity rose among adults to 21 per cent of women and 19 per cent of men in 2015-16, up from 13 per cent and 9.3 per cent in 2005-06. Childhood obesity has increased in 20 out of 22 surveyed states between NFHS-4 and NFHS-5.
Diabetes, hypertension, and heart disease
The ICMR-INDIAB national study documents alarming prevalence rates: 11.4 per cent for diabetes (around 101 million individuals), 15.3 per cent for prediabetes (136 million), 28.6 per cent for generalised obesity, and 39.5 per cent for abdominal obesity. Hypertension affects approximately 315 million Indians. NCD mortality in India rose from 37.9 per cent of all deaths in 1990 to roughly 61.8 per cent in 2016, paralleling the explosive growth of the UPF market.
Why ultra-processed foods drive disease
UPFs are typically high in saturated fats, free sugars, and sodium, while being low in dietary fibre, protein, and essential micronutrients. They also tend to be calorie-dense and engineered to override the body’s natural fullness signals, leading to overeating. A major ICMR study reported that 62 per cent of calories consumed by Indian adults come from carbohydrates, disproportionately from refined sources, a pattern strongly linked to obesity, diabetes, and cardiovascular disease.
Nutritional value: benefits and downsides of processing
Processing itself is not inherently bad. Pasteurisation, drying, refrigeration, and basic packaging save lives by reducing foodborne illness and extending shelf life. Processed staples make food affordable, accessible, and safer to transport across India’s vast geography. The challenge lies in how and how much a food is processed.
Nutrient loss during cooking and processing
Industrial processing and even home cooking cause considerable loss of vitamins and minerals. Heat-sensitive vitamins like vitamin C, thiamine, and folate degrade during boiling, frying, and high-temperature processing. Water-soluble nutrients leach into cooking water, while milling removes the bran and germ of grains, stripping away fibre, B vitamins, and minerals. The FSSAI notes that there is often considerable loss of nutrients during the processing of food, which is one reason fortification has become a public health priority.
Additives: the trade-off
Additives extend shelf life and improve texture, appearance, and taste. Emulsifiers stabilise sauces, preservatives prevent spoilage, and artificial colours make foods more appealing. However, many UPFs combine high levels of salt, sugar, refined oils, and additives that, consumed regularly, are associated with higher body mass index, type-2 diabetes, hypertension, cardiovascular disease, and certain cancers. Trans fats, found in some bakery and fried snack products, are particularly harmful.
The case for fortification
Fortification is the deliberate addition of essential micronutrients to commonly consumed foods. India has used this strategy since the National Goitre Control Programme of 1962 mandated iodised salt. Today, the FSSAI promotes fortification of staples like rice, wheat flour, edible oil, milk, and salt with iron, iodine, zinc, vitamin A, and vitamin D to address “hidden hunger” – micronutrient deficiencies affecting millions despite adequate calorie intake.
Importantly, recent FSSAI amendments explicitly exclude High Fat, Sugar, Salt (HFSS) foods from being classified as fortified processed foods, so that fortification cannot be used as a marketing tool to make unhealthy snacks appear nutritious. This distinction matters: adding a few vitamins to a sugary biscuit does not transform it into a health food.
What can consumers and policymakers do?
The way forward is not to demonise all processed foods but to push for healthier food environments. On the consumer side, prioritising minimally processed staples – whole grains, pulses, fresh produce, dairy, and seasonal local foods – and reading nutrition labels carefully can dramatically shift dietary quality. On the policy side, clearer front-of-pack labelling, taxation of sugar-sweetened beverages, regulation of food marketing to children, and stronger restrictions on HFSS foods in schools are widely recommended interventions.
India’s food processing sector will continue to grow, and rightly so given its role in employment, farmer incomes, and food security. The real question is whether growth will be steered toward genuinely nutritious, minimally processed products or remain dominated by the cheapest, most palatable, and most aggressively marketed ultra-processed options.
